Low Carb, low sugar Skyr Cheesecake

…Skyr, the Icelandic ‘Quark’…

 

The first time I heard about the funny sounding ‘Skyr’ was while working out in a Hotel gym with an Icelandic collegue and as we were changing nutrition tips, she suddenly mentioned the Icelandic Dairy Product ‘Skyr’. Thank you Kristín María, for the great tip!

It was only years after when the first German producers of dairy products started to sell Icelandic Skyr in Germany.

Meanwhile the product is so established in German Market that Skyr, which is very rich in proteins, is one of my favourite daily products to feed hungry muscles after a hard work out.

Here the recipe for my low carb, low sugar Skyr Cheesecake! I hope you will love it as much as I do!

Ingredients:

  • 800g Skyr
  • 200g plain yoghurt 
  • 250g soft butter (unsalted)
  • 4 tablespoons maple syrup
  • ½ teaspoon vanilla extract
  • 120g semolina
  • 1 small pack of vanilla custard powder 
  • 1 teaspoon baking powder
  • 1 pinch of salt
  • 1 organic lemon (3/4 teaspoon of lemon zest)
  • 4 medium sized eggs

 

Preparation:

  1. Preheat your oven to 175 degrees.
  2. Grease a ‘springform’ (26cm ø) and put some baking paper to the bottom of the baking pan.
  3. Start with stirring the butter, the maple syrup and the vanilla extract.
  4. Separate the egg-yolks from the egg whites, then add the yolks to the stirred butter/maple syrup and continue stirring.
  5. In a big bowl, start mixing the dry ingredients semolina, custard powder, baking powder, salt and lemon zest. Add the mixed dry ingredients to the eggs/maple syrup and continue stirring. Then add the Skyr and the Yoghurt to the batter.
  6. Beat the egg- white with a pinch of salt and fold into the batter.
  7. Fill the baking pan with the cake mixture and bake the cheesecake for 60 minutes.
  8. After 60 minutes switch off your oven and let your cheesecake cool down in the closed oven for at least 30 minutes.
  9. Take your cake out of the oven and let it further cool down at room temperature for another 30 minutes.
  10. Before serving, decorate the Skyr-Cheesecake with fresh berries.
